Cacao grown in the Lacandon jungles of Chiapas, Mexico, small-batch fermented with the pulp of guanabana fruits. We use these fermentation experiments as a way to better understand the art, craft, skill and potential of small-batch fermentation on the flavour, texture, and nutrition of cacao. 

Ingredients: Cacao fermented with guanabana, cacao butter, and coconut sugar.

Tasting notes: Leathery, earthy, woody, low acid.
